Garlicky napa cabbage

A quick sautéed napa cabbage side that is sweet, savory, garlicky, and light. Useful anywhere you want a warm vegetable that does not compete with the main dish.

  • 600 g napa cabbage, sliced
  • 15 ml neutral oil
  • 3 garlic, sliced or minced
  • 5 g fresh ginger, minced (optional)
  • 15 ml soy sauce or tamari
  • 10 ml rice vinegar or lemon juice
  • 5 ml toasted sesame oil
  • to taste chili crisp or chile flakes (optional)

Method

  1. Heat the neutral oil in a large pan over medium-high heat.
  2. Add the garlic and optional ginger. Cook for 20 to 30 seconds.
  3. Add the cabbage and stir-fry for 3 to 5 minutes, until wilted but not mushy.
  4. Add the soy sauce and cook for 1 minute.
  5. Remove from the heat and finish with rice vinegar or lemon juice, sesame oil, and optional chile.

Notes

  • Use tamari for gluten-free.
  • Good with fish, tofu, noodles, rice, chicken, or pork.
  • Do not overcook it. The fresh crunch is the point.
